Okara Falafel
4 cups cooked okara (I cook mine with my soy milk and then drain)
2 large cloves garlic
1 tablespoons chili powder
1 teaspoon cumin
1 teaspoon salt
1 teaspoon baking powder
1 tablespoons sesame seeds
1 tablespoons olive oil
1/2 medium onion
1 cup parsley
1 cup water
1 1/2 cups flour
Place 1 cup of the okara and the next 10 ingredients in a blender (if using a Vita Mix set low speed #7 - you don't want it pulverised).
Pour out and mix well the contents of the blender with the rest of the okara and the flour.
Make into small to medium size balls (half dollar size) and fry in 1 inch of oil: 4 min on one side and 4 on the other until golden brown. I use a deep fryer and take them out after about 4 min/golden brown.
Serve on flat bread with thinly shaved cabbage or lettuce, tomato and vegan ranch dressing.
2 cups of dried soy beans makes about 4+ cups of okara.

Hi, I'd like to try making these, but I don't understand about having to cook the okara first. Do you use wet okara from the soymilk maker, and isn't that already cooked?

Delicious! Great to find a recipe that highlights the okara rather than just blending it into bread. These were a lot like the "akra" that I used to eat in W Africa that were also made of beans. They served them sandwiched in fresh bread and topped with onions soaked in chili oil.
Wow, I'm really surprised this has no comments. I was really skeptical of a falafel recipe that doesn't use chickpeas, but I had a giant pile of okara staring me in the face and not enough ingredients to make bread with it, so I decided to make this, which I did have all the ingredients for except the chili powder (I halved the recipe, and substituted the chili powder with something like 1/2 tsp of cayenne and a few dashes of regular black pepper). I also used whole wheat flour because it was all I had.
These are seriously good. I've tried several okara recipes that sucked. But these were really yummy. I shaped mine into little patties instead of balls so I can heat them up later and eat them like little burgers. 5 stars
