No Chic-a-Leekie Soup

What you need: 

3 pounds potatoes, peeled and diced
1 pound leeks, diced
1/2 pound celery, diced
4 green onions, chopped
1/5 cup vegan butter
8 cups vegan chicken broth
1/4 teaspoon pepper

What you do: 

*Wash your leeks before and after cutting!*
1) Combine potatoes, leeks, celery and green onions in a large pot; add margarine and cook until vegetables are softened, about 5 minutes. Add vegan chicken broth and simmer uncovered for 1 1/2 hours. Stir in pepper. Serve hot.
