Nice Spinach Spaghetti Sauce

What you need: 

4 to 6 cloves garlic
1/4 to 1/3 cup olive oil
2 cups tomato puree
1/2 pound spinach leaves (1 bunch)
10 fresh basil leaves
1/2 cup fresh parsley, chopped

What you do: 

1. Add garlic, oil, and tomato puree to blender. Add spinach a handful at a time.
2. Begin to puree the mixture a little bit at a time. Proceed with the rest of the spinach until it is all in and pureed. Add parsley and basil.
3. Pour the sauce from the blender into a saucepan. Heat through. I suggest just heating it long enough to get it hot.
Toss with any pasta!

This was really tasty. I served it with rotini pasta and satueed mushrooms. Tasty!

One thing though is to watch the amount of garlic you put in. I only used four (raw) cloves and it was a bit overwhelming. Next time I would leave the garlic out of the blender and then sautee the garlic with the mushrooms and then add the sauce and pasta.


This is going to be good, I can tell!  I tasted the sauce in the food processor and it's yummy--just waiting for my pasta to be done!  I didn't use exact measurements, and also added a roma.  Used dried basil instead of fresh because that's all I had.  I actually am not a fan of fresh spinach but know it's super-healthy, so I like the idea of "hiding" a whole bunch of it in this sauce!

Next time I'll try to use more fresh tomatoes and less canned sauce to try to cut down the sodium. 


I don't have a food processor so I chopped up the spinach to a really small size. I had this sauce with carrot spaghetti, and I want to marry it. I wish I could get engaged to it, but I think they're already taken.


Thanks for posting this! We are BIG pasta eaters, so it is nice to have a fast and delicious fresh option.  I was shocked by how flavorful this was and my husband really liked it.  Definitely making this one again!


i enjoyed this sauce a lot! Besides that it was very quickly to prepare, so it´s ideal to cook after a long day at work, when you want something really tasty, healthy and quickly. Thanks for sharing ;)b
