My Favorite Rolls

What you need: 

6 to 6 1/2 cup flour
1/2 cup sugar
2 teaspoons salt
2 packages rapid rise yeast
1/2 cup vegan butter
vegan egg replacer for 1 egg
2 cups hot water
melted vegan butter for coating
flour for rolling

What you do: 

Combine 2 1/4 cups flour, sugar, salt, and yeast. Add butter. Mix at a low speed, gradually pour in the 2 cups of water. Add "egg"; increase speed to medium; beat 2 minutes. Beat in 3/4 cup flour to make a thick batter, continue to beat.
With a spoon stir in enough flour to make a soft dough. Turn dough out onto lightly floured surface. Knead about 10 minutes. Cover and let rise 1 hour.
Punch down. Roll dough into 1/2 inch thick circle. Cut into circles using floured biscuit cutter or glass. Place on cookie sheet and coat with melted butter. Let rise 40 minutes.
Bake at 425F for 18 to 20 minutes.
You should keep an eye on these in the oven the cooking time can vary. I have a gas oven and i normally bake them about 18 minutes.

SO HOW'D IT GO?

I had tried another dinner roll recipe and they turned out way too heavy, so I made these in a last ditch attempt for something to bring to Easter dinner and they were super easy and everyone raved about them. Thanks for making me look good!
