Mom's Berry Cobbler

What you need: 

Cobbler: 1 cup all-purpose flour 1/2 cup white sugar 1 1/2 teaspoons baking powder 1/2 cup nondairy milk (I use vanilla soy) 1/4 cup vegan butter, softened (I use Smart Balance Light) Berries: 1/4 cup packed brown sugar 1 tablespoon cornstarch 1/2 cup water 3 cups frozen berries (I use blue, black, and maron berries) 1 tablespoon vegan butter 1 tablespoon lemon juice Topping: 1/8 cup white sugar 1/8 cup brown sugar 1/2 teaspoon nutmeg or cinnamon

What you do: 

1. Preheat oven to 350 degrees F. Mix flour, sugar, and baking powder in a medium bowl. Mix in milk and butter until smooth. 2. Over medium heat, in a medium pot, mix brown sugar, cornstarch, and water. Mix in berries, cook until bubbly, stirring frequently. 3. Add butter and lemon, stir and heat until butter is melted. In a 1-1 1/2 quart baking dish, alternate spooning in warm berries with batter. 4. For topping, mix white and brown sugar. When all berries and batter are in dish, sprinkle sugar mix and spices evenly over the dish. 5. Put dish in oven and bake until bubbly, about 35-40 minutes. (you might want to put the dish on a cookie sheet, in case it spills over the cobbler dish!) This is one of my family’s favorite desserts. It’s even more delicious served warm with a scoop of dairy-free vanilla ice cream. Enjoy!

I can't get over how great this recipe is! It tasted just like any other amazing berry cobbler I've had, if not better! :) I miss blackberries, raspberries, and blueberries (what I had on hand,) and used Earth Balance Whipped. Oh...and Purely Decadent Coconut milk Vanilla Ice cream. Not the least amount of fat possible, but heaven was worth it ;)


This was excellent!!! My mom and I had just picked fresh blackberries out of their backyard and I came on here right away to find a recipe...and not too much time later had a fabulous cobbler to eat!! My little one who is almost 3 years old loved it!! My dad did too and I am having to practice self control to keep myself from eating more than my share! Thanks for a great recipe!


This is the ablsolute BEST cobbler I've ever had!  The two friends who ate it with me agree- together we devoured the entire thing!  I used fresh blueberries I had picked a few days earlier.  Yum!  As is my nature, I made some changes to the recipe.  For the flour I used a mixture of quinoa and sprouted spelt.  For the sugar I used sucanat.  Instead of cornstarch I used arrowroot powder.  And lastly, for the fat, I used good ol' Earth Balance.  We topped the finished product off with Vanilla Coconut Bliss.  Can you say HEAVEN? 


:) Yum! I used fresh blackbaerries that I picked and it came out wonderful. I put it in a glass pie dish and it almost overflowed! It worked out good though, luckily I put a baking sheet underneath like you suggested, it only bubbled out a small bit though.


This is fantastic! I only had a mix of blackberries, raspberries & blueberries in the freezer– the raspberries broke apart during cooking and added a bit more liquid but I just added some extra cornstarch and it firmed up fine. I put all the berries on the bottom and dropped the batter on top with the sugar mix sprinkled on top.

I can’t even begin to describe the wonderful memories this brought back - I have been searching for months for the perfect cobbler recipe like grandmas (unfortunately it was in her recipe cards we found) – I have been missing her so much lately and this was just what I needed.  Thanks :)


This looks delish! I will try it this weekend. You might want to check the Smart Balance Light.....I sort of remember it not being  vegan (whey or something?). The only Smart Balance that  I think is vegan is the Organic one (same ingredients as Earth Balance).
