Minty Carrot Salad

What you need: 

1 large carrot, grated or julienned
1 to 2 tablespoons raisins
1 teaspoon extra virgin olive oil
2 to 3 mint leaves, minced
juice from 1/4 lemon
touch of agave nectar (optional)

What you do: 

It's quick to make, but tastes pretty gourmet, and it's an easy way to get a serving of veggies :)
1) In a bowl, toss together all of the ingredients.

I made this the other day and... WOW!!! Thanks for the recipe! I added walnuts so that I could kid myself into believing I was having some protein as well, but it was a nice addition! I will most definitely make this again. :) I would love to give it 5 stars, but I can't figure out how (I've never rated a recipe before)
