Microwave Brownie for One

What you need: 

1/4 cup flour (I use white whole wheat)
1/4 cup sugar (brown is yummy)
pinch finely ground salt, optional
1/8 teaspoon baking powder
1-2 tablespoons cocoa, to taste
2 tablespoons liquid (water or nondairy milk)
1 tablespoon vegan margarine, melted
1 tablespoon toasted nuts, chopped, optional
1 tablespoon vegan chocolate chips/chunks, optional

What you do: 

1. Combine the dry ingredients in a cereal bowl with a spoon, making sure to break up any brown sugar lumps (if using brown sugar) and cocoa chunks.
2. Stir in the liquid ingredients, leaving a few chunks in the batter, but scraping the sides and bottom of the bowl so it is mostly smooth. Stir in any nuts/chocolate bits that you might like in your brownies.
3. Scrape the sides of the bowl with the back of your spoon and flatten out the top of your brownie. Pop it in the microwave, and set it for two to three minutes. Do not walk away!
Not only is watching the brownie cook nifty and fun, you know it's done when it looks dry in the middle and a toothpick stuck in the center comes out clean. If you walk away, you risk burning your chocolate-y delight! When it's done, let it cool for a minute, and dive in with a spoon!
I have a pretty powerful microwave, so I used "Power Level 7" to ensure even cooking. You might want to do the same for a strong microwave, or if you have a weak dorm room variety, just nuke it on high.

SO HOW'D IT GO?

Such an easy chocolate fix when you're craving something sweet at midnight and have no vegan baked goods in the house. :) I added some peanut butter.

;)b Love this recipe, but with a few alterations. To make the brownie more gooey or more brownie like, cuz this recipe gives it a more cake like texture. So what i do instead is i  stick with your dry mix but with the wet mix i use 2T melted vegan margarine and 2T or silken tofu and mix those 2 together and then mix w/ the dry mix and now at this point the mix tends to seem too dry and clumpy but all you do next is splash in a lil milk of choice ( i use rice milk) , pour in just enough to make the mixture wet and creamy but not runny. Then bake like you said and there you have a more brownie like texture!

For a regular brownie, this would be good.  For a microwave brownie, it is amazing.  Seriously.  Even though it makes about three times my idea of a one-person brownie, I ate the whole thing :)
I did white whole whear flour, brown sugar, and added chocolate chips.  I also had to add an extra tbsp of water.  And I put chocolate syrup on top when it came out.  ;)b

I did 1 1/2 minutes, but next time I think I'll do even less b/c I basically like my brownies more batter than brownie  :)

So good! Worked perfectly for me at 2 1/2 minutes on high. I used max amt of cocoa and choc chips and walnuts. Totally what I needed today.

This is a decent recipe, and will definetly cure a sugar and/or chocolate craving. But for me it's wayy too sweet and doesn't taste allot like brownie  ???
With the chocolate chips it was also way too chocolaty. And I've tried it both ways.

I used brown sugar, whole wheat flour, and chocolate almond milk for my liquid. I also added cashew pieces.
Mine was done just under 2 minutes at full power. Thanks for this!

Seriously?!! This is amazing! I followed the recipe exactly, used rice milk, and minus the nuts and chocolate chunks. I look forward to playing around with this recipe adding nuts and chocolate chunks, frostings and syrups. It hit the spot for my sweet craving, and I will probably making this throughout my entire life as a vegan.

I made this into a "spice cake" by subbing for the cocoa a pinch each of cinnamon, clove, and nutmeg and adding a teaspoon of shredded coconut. Delicious!!

Wow, this recipe is amazing and so quick! I added crushed candy canes for a special holiday version. Will definitely be making this again  ;)b
