Chocolate Banana Brownies
What you need:
1 1/2 cup of white flour
1/2 cup cocoa powder
2 large very ripe bananas (until skin is brown spotted)
2 cups of brown sugar
1/4 sea salt
1/2 cup of soybean oil
1 tablespoon pure vanilla extract
1/4 of shelled (slithered) almonds
What you do:
In a large bowl mix vegan sugar and bananas until bananas are liquefied. Blend in vanilla extract and oil.
In a separate large bowl, mix the remaining dry ingredients except the almonds, combine both bowls into one. Then mix in the almonds.
Grease a 9x9 square pan. Add mixture to pan. Bake at 350 for 30-35 minutes.

These turned out GREAT! I made a few adjustments though... I put half the sugar, 1 banana and an equal amount of applesauce, along with 1/4 cup olive oil and 1/4 cup soy milk, and a sprinkle of baking powder...they cooked perfectly. not too cakey and not too fudgey...
Man, I just realized I never left a review for this recipe.
I tried this recipe after many failings with making brownies (mixes or from scratch). I'm proud to say this was my first successful batch of brownies, and realizing that it has no leavenings makes it all the more confusing that this recipe would work for me. They're definitely chewy, banana-y brownies, and what I like about them is unlike traditional greasy ("fudge") brownies, you don't take them out of the oven when they're still liquid and hope you got them at the right moment. I've also had brownies harden up like crazy after refrigerating them (I have a brownie curse or something), and it's never a problem with these thanks to the banana.
I think next time I may add some baking powder and see if they get fluffier or something; but really, they're already filled with chewy chocolatey goodness =)
I haven't tried this recipe, but after reviewing the ingredients I thnk one reason It might not be working properly for some people because it doesn't seem to have any baking powder or baking soda.
