Mexican Rice Recipe
1 bunch spinach
1 bunch cilantro
1/2 bunch parsley
1 jalapeno pepper, seeded
1/2 (15-ounce) can coconut milk
1-1/2 cups water, divided
pinch salt
1 teaspoon olive oil
1 onion, diced
2 cloves garlic, diced
1 cup long-grain brown rice
handful fresh chives, chopped
1. To a blender, add spinach, cilantro, parsley, jalepeno pepper, coconut milk, 1/2 cup water, and salt; blend until smooth.
2. Heat olive oil in a pot over medium-high heat. Saute onion, then garlic.
3. Add the rice to the pot and stir until slightly browned. Add the blended greens mixture and 1 cup water; stir and then bring it all up to a boil. Once it has gotten boiling, turn it down to simmer for 45 minutes.
4. Sprinkle with chives before serving.

SO HOW'D IT GO?
Wow, what a different recipe! The flavors were really bright but warm. I liked it a lot but because it is kind of an unusual dish I could see someone's taste buds not knowing what to think of it. For example, my husband's clear as mud opinion was, "..it's kinda good and kinda weird." Then again he doesn't like spinach or cilantro... so I guess I didn't really make it for him >:D I ended up adding another 1/2 cup water to the rice as it was cooking. I'll make it again for myself!
