Rice, Bean and Pineapple Salad

What you need: 

3 cups quick cooking - cooked brown rice
1 can drained and rinsed black beans
1 1/2 cups chopped pineapple
a handful of chopped cilantro
1 large chopped sweet red pepper
juice of a lime
a few dashes of vinegar
a few dashes of hot sauce

What you do: 

Mix all ingredients together in a big bowl and eat warm or cold. Some amounts are vague cause the point is to add stuff, taste test and maybe add more as you go along to suit your particular taste. This makes a great lunch to take to work and everyone oohs and aahs because it looks appetizing and colorful and they wish they had it instead of their ham and cheese!!! You can also throw it on top of some nice cold greens for better taste and presentation.

SO HOW'D IT GO?

This was an interesting combination of spicy, sour, and sweet. It was pretty good for something different, though I probably will not make it again.
