Maple Syrup Bread Pudding

What you need: 

non-hydrongenated vegan margarine (to prepare pan)
2 tablespoons olive oil
2 cups small bread cubes, packed
1 1/2 cups soymilk
1 cup maple syrup
2 tablespoons cornstarch (dissolved in 4 tablespoons of water)
1 teaspoon vanilla
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1/2 cup raisins

What you do: 

Preheat oven to 350 degrees Fahrenheit.
Lightly grease an 8-nch square casserole or baking dish. Combine ingredients in dish. Bake uncoverred for approximately 50 minutes or until top lightly browns. Serve warm.

SO HOW'D IT GO?

I had some spelt bread that I needed to use up, and despite it being the summer, I made this warm, comforting dish :)

I omitted the oil, replaced the cornstarch with ground flaxseed, and added a TON of cinnamon.  I also poured the syrup over the finished product as a sort of glaze.
