Mamas Cornbread Dressing
1 cup chopped onion
2 cups chopped celery
4 cups cornbread (2 small boxes Miracle Maize or other, check ing.)
4 cups bread crumbs (8-10 slices toasted)
vegetable broth (2 and a half cups or more)
1 rounded teaspoon sage
salt & pepper to taste
Cook vegan cornbread according to directions in a skillet (cast-iron is the best) in the oven. Crumble vegan bread & toast in oven. Saute onion & celery in oil. Drain. Mix crumbled cornbread & vegan bread crumbs in large bowl. Add onion, celery, broth (enough to keep the mixture moist), sage, salt, & pepper. Mix well. Cook in heavy skillet in oven for 1 hour.
This is an old and simple southern recipe that has been handed down in my family. It is excellent as a side dish for Thanksgiving, either plain or with gravy.

Sadly, I just checked my Jiffy box...it was full of lard. Now what? I love Jiffy!
FYI - No, not all Jiffy box mixes have lard. In fact, nowadays as opposed to about 5 years ago, I don't even think ANY of the mixes have lard. It's simply too expensive. But even if I'm wrong and there exists out there somewhere a box mix with lard in it, then ANYWAY most of them don't have it. :D

actually it still does...i just transitioned to strict vegetarian so i'm REALLY reading labels and just last week i flipped over the box and need my behind whooped b/c i never knew it had lard in it to begin with. very upsetting b/c i love jiffy and when i'm feeling super lazy, i used it for my my cornbread dressing when i was lacto-ovo. now i have to figure out something else...
This really is a great recipe. It's almost identical to the one my mama used to make and is indeed a staple for southern Thanksgivings. The only difference in the way you and I make this is that I add Ener_G egg replacement equivalent of 4 eggs along with the wet ingredients. It turns out nice and fluffy. I also make sure that when all is mixed together it has the consistency of a slightly thick cake batter before I pour it into a non stick baking pan.
Everyone should try this recipe. It's easy and absolutely delicious! Oh, and by the way,
I used a Martha White cornbread mix which was vegan once, and it came out every bit as good.
