Low Fat Moist Bran Muffins

What you need: 

1 cup non-dairy milk (I use plain soymilk)
1 cup bran flakes
1/4 cup plus 1 tablespoon applesauce
1/2 teaspoon salt
1/4 teaspoon cinnamon (optional)
1 egg equivalent, prepared (I use EnerG Egg Replacer)
1-1/4 cups Unbleached Wheat Flour
3 teaspoons Baking Powder
1 "egg" equivalent, prepared

What you do: 

1. Preheat your oven to 400 degrees F.
2. In a bowl mix non-dairy milk, bran flakes, applesauce, salt, and cinnamon. Let the mixture sit 5 minutes to soften up. Add egg, baking powder, and half flour (approximatly 1/2 cup). Mix well, then add the remaining flour and mix until there are no pockets of flour left. (You could probably use bran cereals but it would taste slightly different.)
3. Spread mixture evenly into large or regular sized muffin pan and bake for 20 to 25 minutes, or until golden brown and a toothpick inserted in the center comes out clean. Remove muffins from pan and let cool for a few minutes and enjoy!
