Lemon Tea Cookies

What you need: 

Cookies:
3 tablespoons water
1 tablespoon flax seeds
1/2 cup nondairy milk
2 teaspoons lemon juice
1 3/4 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup nondairy margarine
3/4 cup sugar, to preference
1 teaspoon grated lemon rind Lemon Glaze:
3/4 cup sugar
1/4 cup lemon juice

What you do: 

1. Preheat oven to 350 degrees F. For flax mixture: In a cup, stir together water and flax seeds; set aside. For buttermilk: In another cup, stir together nondairy milk and lemon juice; set aside.
2. In a bowl, combine flour, baking powder, baking soda, and salt. In a separate bowl, beat nondairy margarine for 30 seconds, then add sugar and beat until fluffy.
3. Add flax mixture and lemon rind; beat well. Alternate stirring the dry ingredients and soured milk into the wet ingredients.
4. Drop from a teaspoon onto an ungreased cookie sheet. Bake for 12 to 14 minutes. Remove at once onto a wire rack. While baking, mix together the lemon glaze to be brushed on the cookies while cooling.

SO HOW'D IT GO?

Just reporting back... These were an absolute HIT at the baby shower today!  My husband (who LOVED these) and I are seriously entertaining the idea of planting a lemon tree in our yard because of this recipe. :biggrin:

Yum yum yum!  I just made these for a baby shower tea party I'm co-hosting tomorrow.  They're a little scone-like and VERY tasty.  I wasn't sure when they were considered "done".  I found that they shouldn't turn golden, but will be set and bounce back when lightly pressed in the center.  Per the recipe instructions, I transferred them to a cooling rack immediately after removing them from the oven, and despite my fears, they were not undercooked.  I made 1.5 times the recipe, hoping for 30 for the party + lots left over, but I only came out with about 34 cookies using a medium cookie scoop.
It's probably a good thing I don't have a lemon tree, or I'd eat these every day.  :hotforyou:  I'll try to post a picture soon.

WOW!!!!!!!  Those musta been some teeny tiny cookies!

Wow, these are good.
I actually made these with chopped bits of candied bitter melon which is a strange combo, but I needed a light cookie that would let the taste of the bitter melon come through since the candied stuff is delicate in flavor.

It was perfect and the light texture of the cokie is so good.
I loved these and will be making them time and time again.

I got 90 bite size cookies from my batch.

These were really good.  However, there almost weren't enough to cook.  I ate so much of the batter! :)

In the words of Rachel Ray  YUM-O!!  I'm taking these to our playgoup's cookie exchange today.  I only had 1 lemon, so I used 1 lime & 1 clementine orange to get the juice up to 1/4 cup.  I also used the rind of the orange in the batter.  I used 1/2 cup of sugar and even with the glaze on top, they weren't too sweet at all.  What a fantastically easy cookie, THANKS!!

This recipe is great. When you tried it, you will like it. I use vegetable oil instead of soy butter, also did not use glaze. The cookies are very delicious, and they are really like small bite size cakes. I will make more cookies next time and try to glaze them. I hope glaze will not make cookies too sweet for me.  :)

I agree - this was a tasty tasty cookie!  one funny thing though - they didn't look like I had expected.they were pretty small, but puffy. it was interesting. and the flaxseed showed up - in little brown specks.

but SOO tasty. I brought them to a meeting, and they were all gone! I love lemon - I love it! the flavour was just like the lemon social tea biscuits that I adore. maybe I'll play around with the shape of these cookies - see if I can make them thinner, to dip into tea.

This is a great recipe! ;D I used 3/4 cup of sugar and 2 energy eggs. I recommend increasing the size of the cookies from 1 tsp to at least 2 because the 1 tsp cookies are gone in one bite! Also, they didn't spread much, they kind of poofed up a little, (probably because I put the dough in the fridge until the oven's ready) but that made them light and fluffy.  :)

omg- amazing. i think this is my favorite cookie EVER..doubled the glaze and soaked the cookies in it..so moist& fluffy, tart& sweet.

these were pretty good, but not what i was expecting at all! theres not much flour to them, so when they say sppon by TEASPOON they are not kidding, cause the cookies spread out to be really thin and wide. the icing was delicious, though! if i make these again, i think i will add more flour and perhaps more egg replacer, they were mostly falling apart. very tasty though!
