Lemon Cupcakes

What you need: 

1 3/4 cups whole wheat flour
2 teaspoons arrowroot powder
1 teaspoon baking soda
1 teaspoon cornstarch
splash nondairy milk
1/2 cup nondairy milk (I use soy)
2 tablespoons applesauce
1/2 to 1 teaspoon lemon zest
5 tablespoons vegetable oil (I used sunflower)
1 scant cup sugar (I used raw turbinado)
1 tablespoon lemon juice

What you do: 

1. Preheat oven to 350 degrees F. Prepare a muffin pan by greasing or lining with muffin cups. Sift together flour, arrowroot, and baking soda.
2. In a measuring cup, mix the corn starch and a splash of milk, until smooth. Add the 1/2 cup milk to measuring cup, along with the applesauce. Add enough water to make 1 cup of liquid. Sprinkle in the zest.
3. In another bowl, mix sugar and oil well. Gradually add your wet and dry ingredients to the sugar and oil mixture, mixing gently.
4. Finally, add the lemon juice to the batter. Spoon into prepared cupcake tin. Bake about 20-30 minutes, or until the cakes pass the clean-toothpick test.
I like these as a gentle, nondemanding dessert or breakfast (what’s the difference between cupcakes and muffins, anyway?). They’re nice with jam in the middle and a dollop of vanilla soy ice cream on the side.

Recipe was a little confusing but I guess I should have read the reviews so I knew what I as doing.  :-\
Either way...the cupcakes are yummy!!  I'll post a picture soon.

very easy recipe and very very delicious.  only took 20 minutes to bake and they taste great!

when i mixed the 5 tablespoons of sunflower oil with the turbinado i substituted 1 tablespoon for lemon oil (basically lemon combined with sunflower oil)  it gave them an extra kick of lemon but i still don't taste too much lemon in the cupcakes themselves.  next time i'll probably just overkill and use all 5 tablespoons of lemon oil :)  i made a glaze with a tablespoon of lemon oil, some earth balance, and some water mixed with powdered sugar.  i was a bit sloppy with it though so the cupcakes don't look very professionally done but they're for people at work so who cares!  left a few without glaze in case someone thought it was too sweet or something (always trying to please everyone)

anywho thanks alot for the great recipe!  i'm sure all my coworkers will thank you as well  :)>>>

Ok, so this recipe does have a few issues (+ my own carelessness)..I did a few things..differently..I used AP flour, and just mixed the flour, baking soda (accidentally..3 tsps..), and 3 tsps cornstarch. So, I didn't add any cornstarch to soy milk, and just mixed the soy milk, lemon zest and juice, and a little water. I added everything together..and baked for maybe 20 minutes? I think the best part of these cupcakes was the glaze that I threw together (lemon zest, juice, powdered sugar, and vanilla). I even added extra lemon to the batter..but it just tasted like a mediocre yellow cupcake.  :-\

made this again, and i definately recommend using muffin cups, i over greased the muffinpan and they came out really oily! my mistake. i didnt have arrowroot powder again, just used cornstarch, they taste good, just look funny. i made a maple glaze this time and it was great with them.

i love this recipe, its really easy (even tho the instructions were a little off :)) and i love making them!

Not so, because after that you instruct to mix sugar and oil. A bit confusing if you dont read the instructions through once before you dive into making them.

You're right, Bohemian_Vegan--apologies to you and others frustrated by the the confusing instructions, that was my mistake. 

It's the flour, arrowroot, and baking soda that should be mixed together in the first step.

I know how annoying an inconsistent recipe is, and feel bad that I've become a perpetrator.  I'll have to see if I can get it corrected so that the recipe is clear.

On a happier note, Buttercup, that's such a cute cupcake picture  :)>>>  Much nicer than the dull photos I get when I try to take pictures of my meals...
