Snack Day Favorite Pineapple Cupcakes

What you need: 

2 cups flour
2 cups sugar
2 teaspoos baking soda
1/4 teaspoon salt
3 teaspoons Ener-G egg replacer
2 tablespoon water
1 teaspoon vanilla extract
1 (20 ounce) can crushed pineapple
nonstick spray

What you do: 

1. Preheat oven 350 degrees F. Grease or line cupcake pan. Mix flour, sugar, baking soda and salt together.
2. Mix egg replacer with water, and add 'egg', vanilla, and crushed pineapple (juice and all!) to flour mixture. Mix.
3. Pour batter into cupcake pans (fill 2/3 of the way) and bake for 15-20 minutes. Check if done with a toothpick.
Source of recipe: My mom used to make these cupcakes for my elementary school class when it was my turn to bring snacks. They were always a hit!

SO HOW'D IT GO?

Delicious!! I used 1 cup of whole wheat & 1 cup of all purpose flour as well as ~ 3/4 cup of sweetened coconut shreds. Very moist. Topped with a coconut frosting recipe found on this site as well, excellent pair! Thank you for sharing Laughing

So good! I used whole wheat pastry flour and I think a banana for the egg replacer. I mooshed up fresh pineapple instead of the canned stuff too. Will def be making these again:)
