Jodenkoeken

What you need:

1 1/2 cups flour
2 teaspoons baking powder
1 1/2 cups sugar
1/4 cup water
1 tablespoon vanilla
2 1/2 teaspoons cinnamon
3/4 cup oil
1/4 cup applesauce
Brown sugar for sprinkling

What you do:

1) Preheat the oven to 350 degrees Farenhiehgt.
2) Mix the dry ingredients in a bowl, then add the wet ingredients. Mix it all until it makes a sticky dough. It will be very sticky. Scoop the dough one tablespoon at a time onto a cookie sheet. Sprinkle the cookies with brown sugar.
3) Bake for 15 minutes, then check on them every three minutes until they are a dark brown. Take them out of the oven and let them harden for about 10 minutes. Eat and enjoy!
Source of recipe: This recipe came to be when I tried to make the vegan sugar cookies listed here (http://www.chezbettay.com/pages/desserts1/drts_sugarcookie1.html), but then ended up making these instead. The name is from what they reminded me of, which are traditional Dutch cookies.
