In-A-Hurry Simple Fried Rice

What you need: 

1-2 tablespoons canola oil
1/2 medium-sized sweet onion, diced
2 cups leftover cooked rice (I like brown rice)
1 cup frozen peas and carrots mix
1/2 cup vegan crumbles
few splashes low-sodium soy sauce
light drizzle chili sesame oil, optional
light drizzle mushroom flavored vegan oyster sauce, optional
light sprinkling black pepper
light sprinkle ginger powder
light sprinkle garlic powder
light sprinkle chili flakes
salt, to taste

What you do: 

1. In a wok or large skillet on medium-high heat, add oil and saute onion briefly. Add the rice, stir, and let set for a couple minutes.
2. Part the rice in center and add peas and carrots, then veggie crumbles and let cook for a minute or so, then stir.
3. Add the splashes of soy sauce and the rest of the ingredients. Let the mixture cook for a few more minutes. Adjust seasoning to liking.
Great fix if you're starving, sleep deprived, and have a million assignments to get finished by the end of the night!

SO HOW'D IT GO?

yummy and quick! i used tofu crumbles and added a little corn. will def make again

I LOVE fried rice and I love it even more when it is simple to make!  I reduced my brown rice to one cup and used half a cup of crumbled (firm) tofu instead of the veggie crumbles.

This was super yum.  I left out the crumbles, tossed in a few kinds of chopped fresh veggies, and I made a huge batch of it.  There wasn't even a single grain of rice left in the pan after my house of 3 were finished eating (and I'm the only vegetarian!)

yummy--just the thing for 2 am (if there is anything that is 'the thing for 2 am,' anyway). I used olive oil, added some green bell pepper, used a raw carrot instead of frozen, and put in a green onion and a tomato. hm, back to work...

Great blend of seasonings, and the frozen veggies are a great idea! Go easy on the soy - I'd use about a tablespoon.
