Vegan Veggie and Tofu fried rice

What you need: 

1 cup white rice
2 cups water
1/2 cup-1 cup olive oil
1/3 green pepper, chopped finely
1/4 purple onion, chopped finely, divided
4 cloves garlic, chopped finely, divided
soy sauce, to taste
1/2 package (about 7 ounces) extra firm tofu, cut to bite sized pieces
1 broccoli crown, chopped
1 teaspoon hot sauce, optional (I use Sriracha)
1 teaspoon curry powder, optional

What you do: 

1. Start your rice on the stove with water and let cook When the rice is done, put into a bowl and set aside to cool off. Pour a little olive oil into the bottom of the same pot you used to cook your rice, let heat up a bit and add half of garlic and onions, and all pepper.
2. Add a little soy sauce. Let fry, and than set to low. Check every once in a while as you prepare your tofu. Heat some olive oil in a frying pan with other half chopped garlic and onions, and some soy sauce. Fry the tofu on high and add olive oil as needed. Add broccoli to pot with vegetables. Add more olive oil or soy sauce if needed.
3. Keep an eye on your tofu, flip it if needed. Once your veggies in the pout have browned a little, you can add your rice. I like to add it in big spoonfuls at a time. Add a spoonful, stir it up and add another. You will need more olive oil and soy sauce at this point. Once all of your rice is added just make sure you stir it often. Add as much soy sauce as you like. If you want it spicy, add some sauce, hot sauce, and some curry powder, to your taste.
4. Don't forget to check your tofu! Just keep frying until tofu is brown and crispy. Now all you have to do is keep frying and stirring the rice until all of the olive oil and soy sauce is soaked up and the rice has a nice brown color and a tiny bit crispy texture. When you get to this point, you are ready to serve! Set the tofu on top of the rice, or eat it on the side. Enjoy!
