Hummus (Hommous Bi Tahini)
1 (15 ounce) can chickpeas, drained
1/5 cup (1 1/2 ounces) tahini
1 clove garlic
1/2-1 teaspoon salt
1/2 medium lemon, juiced (about 1 ounce juice)
2 1/2 ounces cold water
2-4 tablespoons olive oil, optional
1-2 pinches dried or fresh parsley, optional
few sprinkles paprika, optional
3-6 rounds pita bread, warmed
1. Combine chickpeas, tahini, garlic, salt, and lemon juice in a food processor.
2. Process on high for 3 minutes, adding water as needed.
3. Spoon out into a large dinner plate and spread evenly. Chill, if desired.
4. Garnish with olive oil, parsley, and paprika. Serve with pita.
This is an incredible, authentic Lebonese recipe. Most hummus recipes have too much garlic, too much tahini, or use some of the strained off garbanzo bean juice. If you want a tasty, resturant-grade recipe, this is it.'
SO HOW'D IT GO?
Good stuff! I pretty much followed the recipe exactly and it turned out great. I've always been encouraged to add 2 or 3 times the amount of garlic (or more) by friends who make hummus, but then I end up tasting garlic for the rest of the day. This was just right. Like someone else mentioned, I like to blend everything but the garbanzos, and then add the beans and blend them to the point of still having some chunks left. I like the texture better that way. I had this for lunch with the "Never Enough Flat Bread" recipe on this site - also very simple and very delicious. Thanks for sharing the recipe!
I can't believe I've never reviewed this hummus. I've tried about a bazillion hummus recipes, and this is my favorite. My 2 year old daughter shovels it in with a spoon, and I could do that too. I think the recipe needs considerably more water - like double it or more depending on the consistency you want.
FANTASTIC hummus! I don't have a food processor, so I mashed the chickpeas and mixed it by hand. Really, really tasty!
well i'll be. this IS the best hummus ever... thanks for sharing! i blened everything but the beans together first, as suggested in the comments, and yes, very nice results. i'll never buy store bought hummus again.
