Healthy Peanut Butter Banana Oatmeal Cookies

What you need: 

3 ripe bananas, mashed
1 tablespoon vanilla
3/4 cup natural chunky peanut butter
2 tablespoons maple syrup
2 cups rolled oats
1/2 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup semi-sweet chocolate chips

What you do: 

1. Preheat oven to 350 degrees F. In a large bowl, mix bananas, vanilla, peanut butter and maple syrup into a creamy consistency (best to do with a hand mixer).
2. In another bowl, combine oats, flour, baking powder and salt. Add the dry ingredients to the wet ingredients and stir until they are well combined, the batter should be slightly sticky.
3. Fold in the chocolate chips. Place heaping tablespoon-sized balls of the batter onto an ungreased baking sheet and bake for 15-18 minutes.
Let cool and enjoy!

SO HOW'D IT GO?

This recipe really soung very yummy! Best dish for kids as it has nice aroma and mouth watering colors. It has very healthy ingredients like oatmeal, banana and peanut butter.

Raisins instead of chocolate chips as well. I also tossed in some hemp seeds, a dash of cinnamon, and a little agave along with the maple syrup to add some sweetness from using raisins instead of chips.

Mine didn't spread/grow at all which was alright because you could really load a pan up. I used a mini Icecream scooper to scoop them uniformly on the pan. They turned out to have a nice and muffin-top/bread ish texture which was a nice surprise!

A good way to use bananas, but maybe I'll play around a bit to achieve a crunchier cookie.

my spatula snapped in half while mixing these haha! i only used 2 bananas because they were huge and used raisins instead of choc chips. yummy!

I love this recipe. I've made it several times, always getting rave reviews. I didn't have chocolate chips, so I used raisins. Didn't have maple syrup, so I used a bit of stevia. Added some extra vanilla (is there such a thing as too much? :-) ) Thanks for posting! I'm a fan, LuxHippie

Yummmmmm i love these. i used raisins instead of chocolate chips and i prob could have used a lil less peanut butter. thanks for this, great snack!!
