Guava Duff
Dough Ingredients:
4 cup flour
1 cup sugar
1-1/2 teaspoon baking powder
1 teaspoon salt
1/2 cup veg oil
2 cup guava, sliced fine
Sauce Ingredients:
1lb vegan butter
1/2c sugar
16 oz vegan sweetened condensed milk (see http://vegweb.com/index.php?topic=6295.0 for recipe)
1 cup finely sliced guava
imitation brandy and vanilla
Dough Method:
Combine all dry ingredients and mix together. Add oil. Knead approximately 10 minutes until smooth and pliable. Place on a flat surface and roll out to 1/2 in. thick. Spread sliced guava over dough. Roll up into a long round loaf. Wrap in foil. Cook in a double boiler for 1 hr. (this dough is boiled or steamed, you can bake if desired.)
Sauce Method:
Blend vegan butter and sugar together approximately 15 minutes. Add vanilla extract (few drops), vegan condensed milk and guava and blend 2 minutes. Add imitation brandy (to taste) and blend 1 minute.
Cut cooked dough into slices/rounds or chunks. Pour sauce over dough. Sauce stores in fridge but must be stirred, dough can be frozen and re-warmed with sauce on top in microwave. Do not over heat sauce as it will separate.
