Sweetened Condensed Soya Milk (replaces Eagle Brand)

Ingredients (use vegan versions):

1 cup instant soya milk powder (not the kind that needs boiling)
    (Better Than Milk works great)
    2/3 cup white sugar
    3 tablespoon margarine
    1/3 cup boiling water

Directions:

1. Mix the soya milk powder and vegan sugar in a bowl
2. Melt the margarine into the water
3. Add the wet ingredients to the dry
4. Beat with an electric mixer 2 minutes
5. Refrigerate overnight
6. Keeps 1 week refrigerated

Makes the equivalent of 1 can of sweetened condensed milk.  This can replace sweetened condensed milk in any recipe and it works amazingly! Dont forget to make it at least the night before its needed.

Serves: 1

Preparation time: 10 min

This is a great recipe, although I found it to be a little thick. In the future I think I might use 2/3 cup of soymilk powder and 1 cup of vegan sugar and use powdered sugar.  I also found that I needed to use closer to 1/2 cup of water.  I caramelized this for use in the Chocolate Turtle Truffle Torte -- it worked amazingly well.  I will post instructions for caramelization under this category as caramel sauce Regards Rebecca Wilson

This is an excellent recipe.  I use it to make Chocolate Caramel Slice.  It caramelises just like normal condensed milk and the taste is excellent.

This recipe is not as good as an old recipe I have for condensed milk .  Take 900ml of milk (soy milk works well) 750g sugar 40g cornflour Boil the soy milk and while it is boiling add the sugar.  It must be carefully watched in case of burning.  Now stir in cornflour, made into a paste from milk taken from the 900ml and boil for a few minuites stirring well.  This makes 2kg of condensed milk.

This is a great recipe that I use to make truffles, I find it can be a little dry and usually add extra water and use straight away rather than refregerating to get the best concistancy.

I don't care for the powdered "milk" taste.  I haven't figured out a way around that, so I start with liquid "milk."  (Neither of these are my recipes, but I've had them for so long I don't know where they came from anymore.)

Sweetened Condensed Milk
I measure 2 cups of non-dairy milk (I use vanilla almond milk) into a measuring cup.  From that, I transfer 3 tablespoons to a small bowl and whisk it with 2 tablespoons of cornstarch / tapioca starch / arrowroot.  I heat the remainder of the milk and 1-3/4 cups brown sugar in a saucepan.  Once it's warm, I whisk in the starch mixture and simmer until it's thick.

Dulce de Leche
I add 4 cups of non-dairy milk (I use vanilla almond milk), 2 cups of granulated sugar, 1/4 teaspoon of baking soda, and 1/8 teaspoon cinnamon to a *large* saucepan (it foams!) and heat it over medium heat, stirring occasionally. After 15 to 20 minutes, stir it really well (it helps to take it off of the burner), reduce heat to low and continue to heat until thickened and is caramel in color, 45 to 60 minutes.
