Green Chile ~ Chile Verde

What you need: 

6 to 8 medium tomatillos, chopped
2 anaheim peppers, seeded & chopped
1/2 onion, chopped
1/2 bell pepper, seeded & chopped
4-ounce can diced green chiles
3-4 cups vegetable broth
1/2 bunch cilantro, trimmed & chopped
1 teaspoon ground cumin (optional)
2 garlic cloves (optional)
jalapeno, to taste (optional)
This recipe is VERY forgiving amounts of any ingredient can vary depending on what you like!

What you do: 

1. Put all ingredients into a pan. Bring to a boil and simmer for 10-15 minutes until tender. Reserve 1 cup of broth after cooking and set aside. You may not need it.
2. Put into a blender in 2 batches and blend. Sometimes I return the sauce to the pan and thicken it with corn starch.
Things you can do with this recipe:Eat chilled with chips as a salsa!Use as enchilada sauce for Spinach enchiladas.Add "chicken" style Seitan and eat warm with tortillas.serve warm over cooked white rice~YUM!Add fried tofu as in the General Tao's Tofu serve warm with tortillas.ENJOY! I know I do.
