Granny's Hurry-up Dinner Rolls
2 1/2 cup flour (I use half white, half whole wheat), divided
1 tablespoon sugar
1/2 teaspoon salt
2 1/4 teaspoon yeast (or one small package)
3/4 cup warm water
egg substitute to equal 1 egg (http://vegweb.com/index.php?topic=7678.0)
2 tablespoons oil
melted vegan margarine, optional
1. Mix 1 cup flour with the sugar, yeast and salt. Stir in warm water, egg substitute and oil. Beat until smooth (this will be very liquidy). Cover with a hand towel and let rise in a warm place for15 minutes.
2. Stir in remaining flour and knead for about three minutes on a floured surface. Continue kneading until the dough is smooth and elastic. Divide dough into ~12 rolls and arrange in a greased baking pan or muffin tin.
3. Cover and let rise another 15-20 min. Preheat oven to 425 degrees F. Brush tops of rolls with melted margarine, if desired. Bake for 8-10 minutes or until slightly brown.
Using a baking pan will make rolls with soft sides vs. the muffin tin which will make crusty sides. Either one is delicious!
SO HOW'D IT GO?
FANTASTIC! I gave the second rise about 30 extra minutes(I was playing video games, lol) and made them into clover rolls. I also dipped a paper towel in oil, 'cause i don't have a fancy food brush, and rubbed the oil over them afterward, which, I learned from my baking father, keeps whatever bread you've just made very, very soft.
They were gone in hours.

This will be a recipe staple on my countertop. The whole fam absolutely loved them, and I feel like you could add anything you wanted to change them up....Although, the recipe, as written, is perfect.

Excellent recipe, just a couple suggestions:
If you are not using instant yeast you should probably proof your yeast in warm water (~110F/43C) for about minutes (until the yeast starts to foam up) before adding the flour. That way if your yeast is dead you'll know right away and won't waste any flour.
If you have the time, I would suggest lengthening the rise times. I decided to make pull-apart rolls so I mixed all of the ingredients up into a ball (kneading for about 8-10 minutes) then placing it in an oiled bowl and covered with a clean towel for about 45 minutes to an hour.
I punched down the dough, separated it into 12 equal portions, and put them side-by-side in an oiled baking dish (mine was an 8x8 or 9x9 square-ish baking dish, but circular ones work well too) and let them rise for another 20-30 minutes while the oven preheated.
Before sticking them in the oven I cut off little pieces of margarine onto each roll to help them brown and give them nice buttery tops. The tops can be sprinkled with whatever you want to make them flavored (poppy seeds, onions, etc.). I ended up with very soft and delicious rolls -- they were all eaten before I could get a picture!

YUM!!! We ate the whole pan for Thanksliving!!! This recipe is perfect, I wouldn't change a thing, except doubling! I used my Kitchen aid dough hook after adding the rest of the flour, I didn't really need to knead ;). I created an account today, JUST so that I could comment on these. I have to make more today for left overs!
I used 3 tbs ground flax and 3 tbs water for my egg and did half whole wheat flour...so yummy!
:D I used my bread machine to knead this the second time. I'm a lazy kneader. I'm glad I did! It worked out great! I used half whole wheat pastry flour and used 3tbs of ground flax with 3tbs water for my egg replacement! I love this recipe!! Thank you!!
These turned out good! That is saying something coming from someone who consistently fails with yeast breads! Yay!
