Granny Smith Apple Pickle - Thokku

What you need:

Granny Smiths apple (small) - 2nos.
Oil - 2tbsp.
Asafoetida - a bit
mustard - 1/2 tsp
Fenugreek (methi) - 1/2 tsp
Turmeric powder - 1/2 tsp
Chilli powder - to taste
Salt - to taste

What you do:

For all of you who love mango thokku, here's a simple and easy one. Granny Smiths apple is a good substitute for the sour mangoes we get in India. They are basically sour to taste and green in colour unlike the conventional red apples.
Peel Skin of the apple and remove seeds and grate them. Heat oil and fry mustard, asafoetida and fenugreek. Once the mustards pop, add the grated apple, turmeric, salt. Stir well. When the fruit is cooked three forths, add chilli powder. Mix well. When the mixture leaves the sides of the vessel, remove from flame. Wait for the mix to cool before storing it in a container.

SO HOW'D IT GO?

I found that the methi overpowered the acidity of the apples somewhat, so the next day I reheated the pickle and mixed in some tamarind paste. Next time I'll start with that. It tastes much better when it's been chilled for 24 hrs or more.

I tried this. Turned out good to be eaten as a spread on toast or with rice. Pretty close to the real mango thokku.
