Gluten Free Brownies

What you need: 

1 cup oat flour*
1/3 cup oil, shortening, or vegan buttery spread
1/4 rice flour
1/4 glutinous rice flour
1/2 teaspoon baking powder
1/2 cup prunes
1/2 cup sugar
1 tablespoon corn starch
1/2 cup water (or coffee for a mocha version)
1/4 cup nut butter
1 cup chocolate chips
1 teaspoon vanilla (optional)* Editor note: Most oats are contaminated during production and not considered gluten free. You can purchase gluten free oats (they will be labeled). If you are baking these for someone who is sensitive to gluten, please ask them about their ability to eat oats.

What you do: 

1) Preheat the oven to 350 degrees Fahrenheit.
2) If you have a food processor put everything except the chocolate chips and blend until smooth then add chocolate chips and pulse a few times. If you're doing this by hand, first combine the prunes, water or coffee, oil, and vanilla or other flavoring in a bowl and mash together until its a runny jelly consistency the more pulverized the prune is the better. Then add the rest of the ingredients and mix thoroughly. If you have a coffee grinder you can grind regular oatmeal and it works great if you agree with me that oat flour shouldn't cost 5 times as much as oatmeal. They both work well in this recipe but if you use plain oatmeal they will be heavier and less fluffy.
3) Grease your pan and spread evenly across (for brownies) or roll into balls an place an inch apart (for cookies). Bake for 20 minutes.
Source of recipe: I made these when I had a massive chocolate craving and I thought I didn't have the right stuff to make anything decent with, sometimes being wrong is so sweet.
