Garden Vegetable Brown Rice
3 cups water
3 cups brown "minute" rice
1 tablespoon olive oil
1 cup whole kernel corn
1/2 bell pepper, chopped
1/2 medium onion, chopped
6 snow pea pods, chopped
1 cup vegetable broth
1. In a pot, bring the water to a boil. Add the rice to the boiling water and simmer 5 minutes. Remove from the heat, cover and let stand till all the water is absorbed. You can also use slow cooking rice, if preferred - cook based on the package directions.
2. Heat olive oil in a pan. Add corn, bell pepper, onion, and snow peas. Saute until vegetables start to become tender. Add the vegetable broth. Let the broth boil for a few moments to finish softening the vegetables. Turn off the heat.
3. Add the vegetables and broth to the rice - mix thoroughly. Serve as a side dish with your favorite entre.

You're very welcome. Enjoy. You can use what ever vegetables you like / prefer with it - these were just what I had on hand when I decided to give it a try - I had an "orange" bell pepper on hand when I made it.
