Garbanzo Bean Burgers

What you need: 

2 cup cooked garbanzo beans, mashed
1 stalk celery, finely chopped
1 carrot, finely chopped
1/4 small onion, minced
1/4 cup whole wheat flour
salt and pepper, to taste
2 tablespoons oil

What you do: 

Mix the ingredients (except oil) in a bowl. form 6 flat patties. Fry in oiled pan over medium-high heat until burgers are golden brown on each side.

SO HOW'D IT GO?

I added about a 1/4 of a bell pepper finely diced and 1/2 teaspoon each of cumin, coriander and cayenne  pepper and they were yummy! Next time I will add a clove of garlic finely chopped, YUM!

These were great! My only changes were to use green onions instead of white onion, and I also added a garbanzo "egg" (1 tbs garbanzo flour mixed with 1 tbs water) because the mixture seemed too crumbly. This helped it stick together better. I served these in pita pockets stuffed with tabouli, along with some maple glazed baby carrots and steamed snow peas. So easy, so delicious - thanks!!

These were delicious!  They are so versatile, too.  I made them with about 1/2 a teaspoon each of ground coriander and cumin and left out the carrots.  They would be good with various different spices and/or toppings.  I might add a squeeze of lemon juice next time and maybe have it with Trader Joe's Indian Relish.

These were pretty tasty and simple.  I added some homemade celery salt, (celtic sea salt and celery seeds ground with a mortar and pestle), a dash of cayenne and some garlic powder. They were sort of delicate but they stayed together for me. I think they wouldn't stand up in a sauce. I ate them on a kaiser bun with vegenaise and organic dijon and romaine. Oh yeah, dill pickles too. I also grated the carrot and added ground sunflower seeds instead of whole wheat flour, making them gluten free. I think oats would work well in it too. Next time I may sautee the onions first with a bit of garlic. Yes, then they will be just right. Guacamole would really compliment these burgers.
