Gabii's Super Healthy Oat, Fruit and Nut Cookies!
3/4 cup or roasted unsalted almond meal
1 cup of oatmeal, plus a little more
1 grated apple
1/2 a large well mashed banana
1/4 cup of sultanas
5 chopped dates
2 tablespoons maple syrup
1 teaspoon vanilla essence
sweet spice mix or just cinnamon to taste-optional
1 tablespoons non-hydrogenated margarine, slightly melted (olive oil might work but I have
not tried it)
More margarine, if necessary
2 tablespoon Strawberry jam
Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit).
1. In a large bowl, mix together almond meal and oat meal (I like to make my own almond meal by placing a handful of fried almonds in a blender).
2. Put the sultanas in a separate cup or bowl and fill with very hot to boiling water.
3. Add all the ingredients besides margarine and sultanas. Mix well.
4. Add margarine and mix. Drain sultanas and add to mixture, mix again.
5. If the mixture seems too dry, add either some more mashed banana, maple syrup, or almond milk.
6. Spoon mixture in to lined baking tray and bake for 10 mins. Take out tray flip cookies, cook for 5-10 more minutes. **I like to form patties with the mixture in my hands, i find it works better.**
When eaten warm from the oven they taste great, not like a traditional cookie. Once they cool, and even more so the next day, they become more cookie like.

I have just made these and used ground oats that I had previously used to make my own oat milk . I also used pecan meal instead of the almonds (cos I didn't have any) and cranberries & chopped prunes. I have to say, I am seriously impressed. These are great! Thanks for the recipe.

Thank you so much for this recipe.These cookies are healhy and delicious! My brother and I made them, and everyone really enjoyed! We made the firts batch a few days ago, and tomorrow we are going to make it again. Instead of almond meal, we used a mix of ground roasted pumpkin seeds and coconut, and since we didn't had any dates we used prunes, worked great. Also, instead of margarine we used 2 tsp of vegetable oil. ;)b
These are so good! I am eating one as I type--still warm from the oven. I changed a good many things in the recipe. I'll just list my ingredients:
3/4 c almond meal
1 c oats
1 medium banana
1/3 c dried cranberries
1/2 chopped raw cashew/almond combo
a few sunflower seeds
1/4 c chocolate chips
2 or 3 tbsp molasses
1 tsp vanilla
sprinkle of cinnamon
3 tbsp vanilla yogurt (instead of margarine)
2 tbsp strawberry jam
1 tsp baking powder
I ended up baking them for about 20 minutes at 350. These are wonderful!!!! Thank you for this recipe!
very delicious.. but i changed a lot.. i used this recipe for more of a guide than actually following it exactly..
i used coconut that i blended to a very fine grit instead of doing the same with almonds and threw in a handful of cashews...
i very small diced the apple instead of grating it...
i used a whole banana..
i used raisins instead of sultanas and dates (btw sultanas are golden raisins, at least that's what i have always heard ;))
i used 3 tablespoons maple..
i used coconut oil instead of margarine (it tastes better and is better for you and i always sub it hehe)
i also added about 1/3 cup whole wheat flour, 1 teaspoon baking powder 1/2 teaspoon salt, and 1/4 cup carob chips
i then pushed it all down flat and smooth and baked it in a large glass baking dish (for 20 mins at 375, then another 10 mins at 250).. then i cut it into bars..
they are super super good, but like i said, only loosely based on this recipe hehe.. they are like if a cookie and a granola bar had a baby.. perfectly in between the two.. thanks and some day i'll make them by following the recipe :)
Well I am from Australia and we have raisins and sultanas but I don't know what they are i other countries. I didn't even know they had other names when I wrote this, so I can't really help you :(
Did anyone make them and how did they go?
Here in Berlin, "sultanas" are large, dark raisins-- I feel like they taste different than what are sold as "raisins" (SunMaid, or whichever kind of commercial raisin), but I might just be crazy. Check it out on Wikipedia, there are actually dissenting definitions. =o)
Actually Sultana is a small, seedless, green grape, that makes sweet, small, yellow/green raisins. At least here in Sweden! ;)
Sultana is a type of raisins - big ones, or thats what it is here anyway. I do my own almond meal just by grinding almonds... :)
