Fried Zucchini Sandwich

What you need: 

1 zucchini
flour
unflavored soy milk or other milk substitute
vegan butter or oil

What you do: 

Slice zucchini fairly thin. Dip slices in soy milk. Dip in flour. Fry until desired doneness.
I like it on white vegan bread with ketchup.
Kinda fattening, but a tasty way to use up all the zucchini from the garden.

SO HOW'D IT GO?

These are great and so addictive!  I ate some with pasta, kind of resembled eggplant parmigiana.  Love it!

DELISH  ;)b!  I also did not put mine on a sandwich...but I will totally try that, next time.  The fried zucchini rocks!

Well, I definitely did not put mine on white bread...but I do love them (fried zucchini slices) with ketchup. I added lots of pepper, garlic powder, salt, cayenne, basil..to my whole wheat pastry flour, and used regular soy milk. Not healthy...but yum!

Good! I just ate the fried zucchini with vegan ranch dressing, and not as a sandwich. I recommend adding some baking powder to the flour mix to make the batter a little more fluffy. It also makes the coating a little thicker if you dip the zucchini in the flour first, then in soymilk, then in the flour again. YUMMY!
