Mediterranean Veggie Club

What you need: 

2 slices whole wheat bread
hummus (whatever kind you prefer)
vegan feta cheese (see for recipe)
1-2 tomato slices
1-2 slices red onion (or yellow)
4-5 slices cucumber
some leaf lettuce (or spinach)

What you do: 

1. I like to lightly toast the bread
2. Spread hummus however much you want
3. Add vegan feta cheese to preference
4. Basically, add the ingredients however you prefer and in whatever quantity.
I like to put four toothpicks in mine and cut it club style!
