Fiesta Fruit Salad

What you need: 

6 firm peaches, cut into bite-sized pieces
5 large mangoes, cut into bite-sized pieces
1 medium pineapple, cut into bite-sized pieces
1 medium watermelon, cut into bite-sized pieces
1/2 cup chopped cilantro
1/4 cup lime juice (2 limes)
1 tablespoon cayenne pepper

What you do: 

1. In a bowl that holds at least 8 quarts, combine peaches, mangoes, pineapple, and watermelon.
2. Add cilantro, lime juice, and cayenne pepper. Toss gently to evenly mix.
3. Chill for 1 to 2 hours. Mix again before serving.

SO HOW'D IT GO?

Thanks for your replies to my post. Though I dont know why this wasnt stuck in recipes per my submission. Oh well at least it went through somehow.  :)

I am embarassed to admit this, but I drove to Rochester to buy mangoes. I had such a craving for fresh fruit other than apples, oranges, and bananas...

Anyway, this was pretty good. I used 2 pineapples, 4 mangoes, peaches, and oranges that I had left over from fruit baskets as well. I left the watermelon out, 'cause I don't really like it that much. I don't know about the cilantro - I like cilantro, but it gave it more of a salsa-esque taste to me. I wound up adding a can of black beans. Next time I might try it with more citrus fruits and leave the cilantro out. The cayenne added a nice kick, though, and a nice contrast to the sweetness of the fruit. I'll probably monkey around with this one more.

FYI, 1/16 cup is 1 tablespoon.
