Feel Good Kale Sauce with Pasta

What you need: 

3 to 4 servings pasta (I like Angel Hair)
1 carrot
1/2 onion
2 large kale leaves, large stems removed
2 garlic cloves
2 tablespoons olive oil
salt and pepper, to taste
1/2 cup unsweetened or plain nondairy milk (I use soy)
1/3 cup nutritional yeast

What you do: 

1. Cook your pasta according to package directions. If you do this simultaneously, you can have dinner ready in 12 minutes or less. Drain, when done.
2. While the pasta is cooking, put the carrot, onion, kale leaves, and garlic cloves into the food processor to create a pulp. It shouldn't be a liquid, but just very pulpy and small little bits.
3. Heat the olive oil in a pan, and add the vegetable pulp. Saute it for about 5 minutes, and add salt and pepper as you cook it. When it is heated through, pour the milk into the mixture and allow it to get hot and a little bit bubbly.
4. Add the nutritional yeast, and mix it in and keep cooking it. You can add more milk if you would like a thinner sauce. Add salt and pepper to taste. Mix sauce with drained pasta.
This sauce is delicious mixed into pasta, and I feel good every time I eat it (which is about once per week). My kids prefer it as a side dish. All the omnis I have served it to like it as well!
Source of recipe: Hoopy~D gave me the idea for this sauce, and I have run with it and make it all the time! It's my go to recipe because I usually have all of the ingredients on hand.

This is such a simple recipe! And it tastes wonderful. I added a couple of chopped roma tomatoes to the pasta. It all had such a great flavor. I can't wait to play with this one more.

I ate this with brown rice fusilli pasta. Next time I think I may need to double the recipe, or eat it as a side. It is such a delicious, simple and quick recipe to make that it will be my go to meal as well!

I'm so glad people are trying/liking this! HH's turn :)
Tonight I made it and forgot the garlic, and it was still good. I also added some powdered cashews and it did not affect the flavor at all, but added some protein that my little ones need.
I play with the proportions each time so its a little different every time. Sometimes thick, sometimes thin. It reminds me of kale pesto. So yum!

Not a vegan or a vegetarian and I loved this recipe, as did my husband.  Made it exactly as the recipe indicated (which i rarely do) and it was super.

This was soo tasty! I didn't have any carrots but it was still good! I used extra kale and also had some frozen butternut squash that I sauteed with some olive oil and onions.  I topped the pasta with the squash and it added a little bit of sweetness!  I will def make this again!

Wow, that was amazing! just finished eating it. I'll make this more, but i'll prolly keep adding more and more kale each time, may as well do more of a heathly thing :)

I didnt have any onion so i added extra garlic, and I didnt have nutritional yeast, so I put this vegan parmesean substitute in it (second ingredient was nutritional yeast, so i figured it'd work... first ingredient was walnuts, but it worked), and lastly i was out of soy milk, so rice milk worked. Instead of adding more milk i used pasta water and just added as needed after i mixed it with my cooked pasta. I'll have to try this again when i actually have all the right ingredients. Other than what i was out of and skipping the oil, i followed the recipe exactly, and WOW, so good.

I threw my dessert right on top of it all, a really big and fresh organic heirloom tomato chopped in big chunks. so good.

I made this tonight and I love it.  I had it with whole wheat pipe rigate pasta which is like a small tube with one end sealed up and the other cut at an angle to make a little pocket.  Really good to hold the sauce in.  I'll definitely be making this again.  ;)b

Wow -This was really good!! Very simple to make on a busy week night .Very affordable as well .Kale is so good and underrated .I feel it to be an essential part of a vegan diet> Packed full of calcium .
