What you need: 

1 cup brown rice
1 super large or 2 medium sweet onions, chopped
2 tablespoons olive oil
2 teaspoons cumin
2 teaspoons salt, or to taste
1 cup red lentils
steamed spinach or kale, to serve

What you do: 

1. Add 1 cup of rice to 2 cups water. Bring to boil. Lower heat, cover and simmer 45 minutes. Add onion into pan with cumin and salt. Saute in olive oil until almost carmelized, about 10-15 minutes.
2. Add red lentils and 2 cups water to the onions. Bring to boil. Lower heat and simmer, stirring occasionally until lentils are cooked and very smooshy. When stirred towards the end, they should be smooth.
3. Steam spinach or kale. (Sometimes I'm feeling lazy and just microwave a 10 ounce package of frozen spinach; works great!)
4. Serve lentil mixture over rice and top with greens.

A flat, yellow onion. Vidalia, or Texas sweet, and others.

What nationality is this recipe?  The name sounds vaguely Ethiopian.  Any story on it?

I only had about 1/2 a cup of red lentils left so I used green lentils, and just cooked it for forever, but it was really good.  I'd definitely like to try it with red lentils next time though.
Also had some fresh spinach which I sauteed with some crushed garlic, little bit of olive oil and some pepper, went really well with the lentil mix.  Good dinner, easy and versatile : )

I really liked this.  I sadly could not find red lentils, so I was stuck with brown.  It still worked well.  Surprisingly flavorful considering how simple the recipe is.  I sauted a bit of kale with garlic to put on top.  I also made the tomato, pepper, onion, avocado, cucumber vinagrette mix (mentioned in an earlier review) to add.  My omni dad and veg husband all loved it.  Lots of room for modifying this recipe too.

Deeee-lish.  The simplicity of the lentils, rice, and onions reminded me a lot of mujhadeera, and the kale gave the dish an earthy, fresh complement.  I cooked my lentils in vegetable broth for added flavor, and used a combination of whole cumin seeds and ground cumin when seasoning my lentils and onions.  Great comfort food!

This turned out really great! I truly loved it and the kids and hubby also enjoyed it. My kids asked for seconds!
I served it with cornbread, which was also amazing. what a great mix of flavors.  ;D

Really, really good!! I used brown lentils also, and they didn't get soft and mushy so I used a hand blender to mash them. Will definitely make again soon!
