Egyptian Style Fava Beans

What you need: 

1 can of cooked fava beans (broad beans)
1 small chopped tomato
1 jalapeno pepper seeded and diced small
salt , pepper, cumin
fresh lemon juice
corn oil

What you do: 

This is the authentic Egyptian beans they love to eat for breakfast. This really holds you over. Mostly drain one can of fava beans into skillet. With potato masher or bottom of the can mash most of the beans. Not too much leave it lumpy. Pour about 1/8th cup of corn or olive oil. More or less depending on your taste. Add tomato and jalapeno and pepper. Most don't need salt because they are salted in the can.
Cook over med/high heat till bubbling keep stirring and add more oil if you need it. Cook till peppers are soft maybe 10 minutes or so. Add cumin to taste the last minute or two of cooking. I usually use about 2 or 3 tablespoons. Stir well and remove from heat.
Add fresh squeezed lemon juice and serve with vegan pita bread and tahini if you like. This is really great for breakfast or anytime.

SO HOW'D IT GO?

I love fava beans but usually just eat them heated up with some salt and oil but this recipe was awesome! I'll be making this again for sure!

This is absolutely fabulous! I sometimes  make it with mixed beans and kidney beans too. Sometimes add texmex spices and onions. So great, it's become a breakfast stapple. Thanks for sharing :)

i have never had fava beans before and this sounded like a good way to try them.. man i was really worried when i opened up the can, cuz fava beans are STINKY!.. but this turned out really good and i would definately make it again.. it actually reminded me a bit of hummus..

i used 2 jalapenos, cuz spicy is better ;), and lime instead of lemon.. i think i used more oil than it called for too, and added a little lemon pepper salt to it.. the lime juice at the end is what really made this dish come alive.. good stuff.. i served it with pita, sesame seeds and cilantro..

oooh foul. love this. It's a good idea to add harissa whilst cooking if you can, which means you only need to add garlic and tastes really good.
