Easy Tofu Teriyaki Lettuce Wraps
1/3 cup cornstarch
1/3 cup flour
1/4 cup brown sugar
1 pound extra firm tofu, dried and cubed, crumbled, or both
2-3 tablespoons cooking oil
3-4 garlic cloves, chopped
1 cup mushrooms, diced
1/2 cup cashews
1/4 cup teriyaki sauce, or to taste (I use Trader Joe's Soyaki or less of Kikkoman Teriyaki)
lettuce, as needed
1. In a ziploc bag, mix cornstarch, flour, and brown sugar; add tofu and toss to coat.
2. Heat oil over medium high heat. Add tofu. As it starts to brown, add garlic, mushrooms, and cashews.
3. Cook for about 5-6 minutes, then add teryaki sauce to taste. Cook for additional 2 minutes until sauce has glazed tofu.
4. Wrap with lettuce and serve with additional teriyaki sauce for dipping.

These were absolutely DELISH! I'm also thrilled that BOTH my kids liked it, which doesn't happen often. I did make a few additions - 1/4 cup scallions, 1/4 cup chopped daikon, and 1 cup bean sprouts. I could see this tasting great with mushrooms or water chestnuts too. Thanks for the awesome recipe!

These were very, very good! So easy to make. Next time, I won't add any extra salt; combined with the soy sauce, the extra salt was a bit much. Oh, I still ate them up like nobodies business, they were just a little salty!
