Easy Rosemary Pan-Fried Potatoes

What you need: 

3 chopped potatoes

2 cloves of garlic

3 tablespoons of olive oil 

2 teaspoons of rosemary - dried

salt and pepper to taste

What you do: 

Preheat oven to 350 degrees Fahrenheit. Wash potatoes and pierce with a fork. When oven is preheated, wrap potatoes in tin foil and place in oven for 35 minutes. 

When potatoes are done, cut them into bite-sized cubes and mince garlic. *remember that you don't want the potatoes to be baked through in order for you to cut and further cook them. * Put a pan on he stove at medium heat with olive oil. When pan and oil are heated, allow the garlic to cook for 2-3 minutes, then toss in potatoes.  Put rosemary in the palm of your hand and grind with your thumb to allow the flavor to escape, and place in the pan. Flip potatoes often, but let them to brown on each side. When determining when they're cooked,break them apart and test softness.

serve with steamed veggies and a side of vegan sour cream and salsa- I chose broccoli and spinach
