Easy Miso Soba Soup with Edamame

What you need: 

1/2 small onion, chopped
1 clove garlic, minced
sesame oil
rice vinegar
2 teaspoons ground ginger
4 cups water
1 vegetable bouillon cube
3/4 cup frozen edamame (varieties of soybeans harvested in the green stage)
handful of uncooked soba noodles
1 packet of miso cup soup w/ seaweed

What you do: 

Saute chopped onion in oil over med. heat until soft. Add garlic and cook for 1 minute. Add a splash of rice vinegar and the ground ginger. Add water and turn heat up to high to bring to a boil. Add boullion cube and stir until it dissolves. Add edamame. Bring to boil again and add noodles. Cook for 6 minutes or until noodles are soft. Remove from heat and add miso cup packet. Enjoy!
