Easy Healthy Curry

What you need: 

2 medium sized sweet potatoes (regular potatoes work too)
1 can chickpeas, drained
2 cups soy milk
a few squirts ketchup
1 teaspoon vegan sugar or other sweetener
1 tablespoon salt
1 teaspoon curry powder
1/2 teaspoon coriander
1 teaspoon turmeric
1 head cauliflower
1 carrot
rice or other grains, to serve over
1 teaspoon cumin seed
1/2 teaspoon black mustard seed

What you do: 

I wanted to make a curry that was lower in fat. This one uses coconut milk instead of soy, which is also more convenient since I always have some on hand. I also substituted ketchup for tomato paste for additional ease.
Start rice or other grains.
Cut up potatoes, cauliflower, and carrots into roughly bite-sized pieces.
Heat olive oil on medium high in a large stock pot. Saute seeds until they pop, about 1-2 minutes.
Add vegetables. Saute until they are browned lightly.
Add cumin, coriander, curry, turmeric, sugar, and salt. Saute a few minutes more.
Add a few squirts of ketchup to the soy milk and mix thoroughly. Add the ketchup / soy milk mixture and the chickpeas. Turn down the heat and cover. Simmer the mixture for 20 minutes or so, stirring occasionally, until vegetables are fork tender. If the soy milk gets frothy, stir the curry and turn the heat down a little more. Serve over rice and enjoy.

SO HOW'D IT GO?

I really enjoyed this dish!!! I did make some changes based on ingredients i had on hand....i used white potatoes, i had no cauliflower, i added a parsnip and an onion, used celery seed instead of mustard seed, added cayenne pepper, used 1 can of coconut milk, left out the ketchup, over brown basmati rice......DELISH!!! I would try this with other vegetables too! Thanks for the Recipe!!

I really love curry and I was excited about making this dish, but what a disappointment. My family hated it and we couldn't even finish it. My husband eats anything so that's saying a lot when he won't eat it.

So Good!
The only changes that I made were that I used tomato sauce instead of ketchup, added 2 carrots instead of 1 and added some left over kale.  Oh, and I microwaved the sweet potatoes for 5 minutes before adding them to the pot.
I thought about adding some coconut extract.....maybe I will next time!

this was my first ever attempt at making a curry from scratch and i'm really pleased with it.  my only changes were using ground cumin instead of whole seeds and i didnt have any mustard seeds.  it's not a spicy dish, which i like, but you could definitely add more if you want to.  I like the richness that the sweet potatoes and the carrots add to it, it definitely makes you forget that youre using soymilk and not fatty coconut milk.  maybe some spinach would be a good addition just to add some color or maybe some chik'n strips would be yummy, too.  thanks for this recipe - i really liked it and would definitely make it again!
