Dorothys Chatterbox Cafe Veggie Soup

What you need: 

1 cup carrots, diced
1 large onion, chopped
1 cup celery, chopped
1/2 large green pepper, chopped
1 zucchini, sliced
1 fresh tomato, chopped
1/2 cup fresh parsley, chopped
1/2 cup pearled barley
2 0r more cloves garlic, minced
1 teaspoon dried basil
scan't 1/4 teaspoon ground cloves
1 bay leaf
salt and pepper to taste, vegetable broth to cover

What you do: 

Throw everything in a large pot, cover, and cook slowly until the barley and vegetables are tender, about 1 hour.

SO HOW'D IT GO?

This is basically what I made last night, but I'd say it only took about 35 minutes:

I put the veggie broth on to boil (about 5 cups), then diced the carrots, zucchini, onion and celery, tossed those in with the barley. After emptying the dishwasher and feeding the dog, I chopped up the tomato and cheated on the spices by just adding a teaspoon of "italian spices" instead of chopping everything fresh. Popped a couple slices of bread in the toaster and 10 minutes later: voilá! Dinner!

Alterations: Didn't have pepper or cloves, life was just fine without it.

Cons: Definitely does not feed 4 people. I had a large bowl for dinner last night and a large bowl for lunch today.
