Couscous Supreme

What you need: 

1/2 cup onions chopped
2 cloves of garlic chopped
1 small sweet red pepper chopped
3 tablespoons sun-dried tomatoes, with oil chopped
3 cups fresh spinach rinsed well and dried
1 cup uncooked couscous
water for couscous (check package)
2 sprays olive oil cooking spray
1 tablespoon kosher salt
fresh ground pepper to taste

What you do: 

Prepare the couscous according to package directions and set aside.
Sauté the garlic, onion and red pepper in a pan coated with the olive oil spray until softened. Sprinkle with 1/2 the kosher salt.
Add the sun-dried tomatoes and mix well to combine.
Add the spinach. When it is wilted add, the couscous, fresh ground pepper remaining salt and mix well.
Serving size ½ cup.

SO HOW'D IT GO?

Great recipe, I really enjoyed it.  I didn't have a red pepper so I just left it out, and it was still great.  The only thing I might change next time is to add a bit more garlic.
