Corn Salsa

What you need: 

1 (16 ounce) can corn, drained
1 (4 ounce) can green chilies, drained
1 jalapeño, seeded and finely chopped
1/4 cup green bell pepper, chopped
1/4 cup green onions, sliced
2 tablespoons white wine Vinegar
1 tablespoon vegetable oil
1/4 teaspoon salt

What you do: 

1. Mix all ingredients.
2. Cover and refrigerate until chilled, about 1 hour.

SO HOW'D IT GO?

This was really good.  I did make one substitution that probably didn't make much difference.  I didn't have white wine vinegar so I used 1 TBL regular white vinegar and 1 TBL rice (wine?) vinegar.  I'll definitely be making this again!

I made this fresh corn and it was so delicious. I also substituted olive oil/lime juice for the vegetable oil/vinegar. It was really great with soyrizo and rice burritoes.
