Comfort Cookies
1 cup oat flour
1 cup spelt flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla extract
2 bananas
1/4 cup olive oil
3/4 cup turbinado sugar
2/4 cup peanut butter
1/2 cup chocolate chips or carob chips
1) Place dry ingredients in mixer bowl and mix to combine.
2) In a small bowl mash the bananas with a fork. Add oil and then place the banana mixture along with your vanilla extract and peanut butter into the mixture and mix on high speed for 1 minute. Add the chocolate chips and mix until blended.
3) Chill dough for about 20 minutes. Preheat the oven to 350 degrees Fahrenheit.
4) Roll dough into small balls and place on cookie sheet. Bake for aout 16 minutes or until bottoms are brown. Let cool and enjoy!
Source of recipe: I came up with these yesterday, and decided right away to call them comfort cookies because they have in my opinion everything I'm looking for in comfort food, oats, bananas, sugar, peanut butter and of course the chocolate.
