Chocolate Zucchini Loaf

What you need: 

3 egg replacers (http://vegweb.com/index.php?topic=7678.0)
3/4 cup vegetable oil
2 cups sugar
2 teaspoons vanilla
2 1/2 cups flour
2 cup zucchini, grated
2 teaspoons grated orange peel, optional
1/2 cup cocoa
1 cup walnuts
1 teaspoon salt
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/2 cup nondairy milk

What you do: 

1. Preheat oven to 350 degrees F. Grease 2 loaf pans. Beat egg substitute, and add oil, vegan sugar and vanilla.
2. Blend in dry ingredients with milk alternately.
3. Pour in prepared pans, and bake for 50 minutes.

SO HOW'D IT GO?

This was delicious! I made a lot of changes, basically to suit my tastes/cupboards: (vegan) flaxseed meal+water for egg replacer, 1.5 cups ww flour, 1 cup regular flour, 3/4 cup cocoa powder, 1/2 cup apple cinnamon applesauce, 1/4 cup canola oil, 1 cup sugar, 1 cup pecansinstead of walnuts, and 1/3 cup chocolate chips. I made one loaf and 12 muffins. I baked the loaf for about 40 minutes, and the muffins around 30 minutes (because my oven is tricky). They came out fantastic. Definitely a keeper! Thanks!

This is yummy, but I made a few changes.  I cut half of the sugar out and sub'd unsweetened applesauce, cut a 1/4 of the oil out, used 2-1/2c of zucchini, added an additional 2 tsp of cinnamon, and instead of the cocoa (which I just didn't have) I used about 1/2c of carob chips.  YUM!  Serve warm with just a little bit of Earth Balance.  ;)
