Chocolate Raspberry Brownie Pie

What you need: 

1/2 cup vegan butter (Willow Run is good)
1/2 cup flour
1 cup vegan sugar
1 mashed banana (slightly overripe)
1 1/2 cup vegan chocolate chips
1/2 cup chopped walnuts
1 teaspoon vanilla
1/2 cup raspberry preserves
8- or 9-inch vegan graham cracker pie crust

What you do: 

Melt butter over low heat. Add sugar and stir till completely dissolved. Remove from heat and stir in vanilla and 1 cup of the chocolate chips. Add flour and banana to butter/sugar mixture and mix to thoroughly combine. Stir in remaining chips and 1/4 cup of the walnuts. Pour into graham pie crust. Heat the raspberry preserves for 1-2 minutes. Drizzle over top of pie and sprinkle on the remaining walnuts. Bake at 375 degrees for 45 minutes.
**Note: If pie looks a little liquid-y when you take it out, don't worry. Once it cools, it will set. You can speed up this process by popping it in the fridge.**

SO HOW'D IT GO?

Very rarely anymore do i follow a recipe exactly, but i did with this one and it just did not turn out as expected.  The only thing i changed was to use cherry preserves which i cant imagine really making a difference. anyway:  it had waaaay too much oil.  i baked it for 45 min and it was gooey and bubbling, not even close to being done.  the oil was pooled up around the edges of the crust and all the preserves had sunken into the batter.  i kept baking it for at least another 20minutes and by then the edges had gotten kinda firm and the crust was burnt.  i scraped the edges and cut off the top of the crust to get the burnt flavor off.  it looked all black and bubbly on top and by looking at it you'd never know there was fruit in it.  after it set i took a slice and it was super thick and gooey/fudgy.. not really a brownie texture at all.  the flavor was good but it was way to heavy to be a slice of pie.  i ended up cutting it into small bars and everyone really liked them!  i left the part closest to the edge at my parents house for them to eat cus it was pretty rock hard but when it was almost gone my dad said 'we should make more of that chocolate cherry crumbly stuff!'.  i think with less oil this might work out a little better.
