What you need:

1 cup Smart Balance Light Butter or other vegan butter
1 cup sugar
1 cup brown sugar
2 1/2 teaspoon pure vanilla extract
2 Ener-g Egg Replacer eggs
2 1/3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/2 to 1 bag vegan semi-sweet chocolate chips

What you do:

Preheat your oven to 375 degrees F. Mix these ingredients first: the flour, the salt, and the baking power. In a large bowl, mix softened butter, sugar, and brown sugar until creamy. In a small bowl, mix the Ener-g Egg Replacer; 3 teaspoons plus 2 tablespoon water. Add this to the creamy mixture along with the vanilla extract. Stir. Add the other bowl slowly. It will start to get thick. Add your chocolate chips. tablespoon onto a cookie sheet. leave about a cookie's room in between each cookie. I usually have 12 (3*4) on a smaller pan or 20 (4*5) on a larger pan. Cook for at least 9 minutes. Could take up to 15.

SO HOW'D IT GO?

These cookies turned out great. However, the list of ingredients includes baking soda but the directions includes baking powder. I used baking powder since most other recipes ask for powder, but it might help if this were clarified.

Okay, gotta go gobble down more cookies :>
