Chocolate Bran Cookies

What you need: 

3/8 cup (6 Tbsp) Earth Balance margarine
3/8 cup (6 Tbsp) unsweetened applesauce
1 cup vegan brown sugar
1 teaspoon 807]cornstarch mixed with 1 tablespoon water
1 1/4 cups flour
1/2 cup cocoa*
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 to 3/4 cup wheat bran

What you do: 

Preheat the oven to 350 degrees Fahrenheit.
Let margarine soften, and then mix with applesauce, sugar and vanilla. Beat in the cornstarch mixture.
Mix in cocoa, then baking soda and baking powder, then salt, then flour.
Add the wheat bran little by little (while mixing) until desired consistency (a little less stiff than your regular cookie dough. I use about 1/2-3/4 cup.).
Plop spoonfuls of the batter onto a lightly greased cookie sheet. Bake 8-10 minutes, until the tops are fairly solid.
These make soft, somewhat low-fat cookies. A friend analyzing these cookies observed that they are more like a cross between brownies and bran muffins. But a good cross, I assure you :)
* when I don't have cocoa on hand I use 2 oz dark chocolate (70%), melted. It works great.

SO HOW'D IT GO?

are these omni friendly?

Well, all the omnis in the dorm ate them ... all.  >:(

(this is why I eat some of my cookies before I announce that they exist to other people.)

Oops, I referred to vanilla in the instructions, but not in the ingredients. You can use 1 tsp vanilla in this, or not, or to taste. I'm not sure if it makes a huge difference, considering all the cocoa.
