Chocolate Avocado Dessert

What you need: 

2 ripe avocados
1 (12 ounce) package silken tofu, room temperature
2 teaspoons vanilla
2 tablespoons maple syrup
2 cups chocolate chips, melted

What you do: 

1. Blend avocados in a food processor together with the tofu, vanilla and maple syrup.
2. Blend in the melted chocolate chips.
This can be eaten alone, in a pie shell, or layered individual dishes with whipped topping and or fruit.

Also, I added about 1/4 tsp. salt, which brought out the flavor for us. And I used barley malt sweetened carob chips so didn't need to add the maple syrup. Thank you again!!! Just love it! Can't wait for my daughter to try it:)

Instead of maple syrup, you can use agave nectar or dates as a sweetener and thin out with a bit of water. I have never seen this recipe with the tofu in it.

Very, VERY good, but really rich.  Serve this in limited portions.  I served everyone a dessert cup full with whipped topping.  It was a bit much, but the dessert went over very well.

I tried this plain (without whipped cream) and this didn't taste the best (to me anyway).  I think it would be really good in a graham cracker crust however.

I had only one avocado and no tofu, so I halved the recipe and used 1 cup of soymilk.  Yummy!  I'm hesitant to know what the fat content of this is though:-\
