Chickpea Salad Sandwich

What you need: 

2 slices whole wheat bread
chickpeas
mustard
soy mayonnaise
pickle relish
vegan soy cheese, optional
lettuce, optional- i like the spring greens mix
tomato slices, optional
fresh ground pepper

What you do: 

When I became vegetarian, i missed the weirdest things, and one of those things was chicken and tuna salad sandwiches. This is a good substitute, because with the mustard, mayonnaise, and relish, you can hardly tell what the main ingredient is anyway. Non-vegetarians will like it too!
Put the chickpeas, mustard, mayonnaise, and pickle relish (or whatever you would typically make meat salads with) in a bowl and mash with a fork into a lumpy consistency (should have texture, not smooth like hummous). Put cheese on one slice of vegan bread spoon chickpea salad over it. Top with lettuce and tomato slices and add pepper to taste. Put other slice of bread on top to close sandwich and slice in half from corner to corner. Yummy... enjoy! ;)

SO HOW'D IT GO?

Sounds delish - could you use other beans? Would the flavour or texture be different?

I have used northern beans for this and it was good, I do prefer the chickpeas

This recipe is simply amazing! I missed the chicken-salad sandwich so much and when I ran across this recipe here on vegweb, it was like a dream come true. I ran out and got mustard, tried the recipe, and found it to be delicious. I omitted the pickle relish as I don't like relish. Next time- garlic and celery in the chickpea mixture!

um...yeah. It's hard to be a vegetarian in south Louisiana.  :'( I'm managing as best I can. Not a lot of options. Meat-loving husband (but he DOES eat veggies!) doesn't help. It's just tough sometimes.

I will try this as soon as I cook some chickpeas. I...sniff...sniff...have never been so...happy!! I crave this kind of sandwich. I can't wait to make it. Chickpeas are SO healthy (umm...compared to, say, chicken or tuna? :).

PS...being vegan for a year compared to switching to a hybrid car for a year is...50% MORE EFFECTIVE AT REDUCING CARBON EMISSIONS. (1.5 tonnes compared to only 1)

WOW! Love it! Only thing, I found the mashing of the chick peas with a fork to be quite labor intensive. I switched them from the bowl to a big flat plate and it was easier, although still hard to do. I wonder if there is an easier way. I might try to stick them in the food processor and do  a few pulses next time. Anyone else have ideas on that?

Try a pastry cutter...a lot easier than using a fork :)

Canned chickpeas will be firmer than home-cooked ones.  I know it's a hassle to cook them on a stovetop so get a slow cooker and cook your beans from the dry state-it is totally worth it in flavor.  In the long run, it's cheaper, too.  If you don't want to do that, try boiling the canned ones for awhile (maybe 10-20 min?) and then draining them.  That might make them softer.  Funny vegan me, I don't own a food processor, but that slow cooker is absolutely amazing!   

I have some chickpeas in my slow cooker now and wanted to find a recipe for them that didn't involve serving over rice-I made a huge batch of curried peas this week and want something different.  I'm very excited to try this one!  Thanks!

I just wanted to add that my husband, who usually makes fun of "veggie-type meals" saw me making my sandwich for dinner and said it looked really good and asked for a bite. Well...he loved it and told me that I can feel free to make it for him anytime! Thanks again for the great recipe!

This is REALLY yummy! I made mine this afternoon and snuck a bite. I am saving it for supper and my lunch tomorrow. I added finely chopped green onion and celery, and a bit of black pepper to mine. I forgot the relish, so I am going to stir that in before I chow down. I was going to add curry powder, but didn't so I may try that next time. Ooooh, raisins may be good in here too, maybe minus the relish. Also, I agree with PENT19...a potato masher works great! This recipe looks very versatile so I am looking forward to playing around with the ingredients.

i use a potato masher and a bowl that is large enough to fit the masher!!
I eat this all the time....

great for a quick lunch!
